Cooking a T-bone steak to medium-rare involves a combination of searing and oven-roasting. Here's a step-by-step guide to help you achieve a perfectly cooked medium-rare T-bone steak:

Ingredients:

  • T-bone steak(s) (at room temperature)
  • Salt and pepper (to taste)
  • Olive oil or vegetable oil

Instructions:

  1. Take the steak out of the refrigerator and let it sit at room temperature for about 30-60 minutes before cooking. Allowing it to come to room temperature ensures more even cooking.

  2. Preheat your oven to 400°F (200°C).

  3. While the oven is heating, pat the steak dry with paper towels. Moisture on the surface can hinder the searing process.

  4. Season the steak generously with salt and pepper. You can add other spices or herbs if desired, but the natural flavor of a T-bone steak is excellent with just salt and pepper.

  5. Preheat a heavy-bottomed skillet or oven-safe pan over high heat on the stovetop. Add a little olive oil or vegetable oil to the pan and swirl it around to coat the bottom evenly.

  6. When the pan is very hot and just starting to smoke, carefully place the seasoned T-bone steak in the pan. Sear it for about 2-3 minutes on each side until you achieve a brown, caramelized crust.

  7. Once the steak is seared on both sides, including the fat cap, move the entire pan to the preheated oven.

  8. Roast the steak in the oven for approximately 5-8 minutes, depending on the thickness of the steak and your desired level of doneness. For medium-rare, the internal temperature of the steak should be around 130-135°F (54-57°C) when measured with a meat thermometer inserted into the thickest part of the meat.

  9. Keep in mind that the steak will continue to cook a bit after you remove it from the oven due to carryover cooking. For precise results, remove the steak from the oven when the internal temperature is a few degrees below your target (about 125°F or 52°C) and let it rest for 5-10 minutes before serving. During this resting period, the temperature will rise a bit more, reaching the desired medium-rare doneness.

  10. Slice the T-bone steak across the grain and serve it immediately with your favorite side dishes.

Remember that cooking times can vary depending on the thickness of the steak and individual ovens, so using a meat thermometer is the best way to ensure your steak is cooked to perfection.
