Milky mushrooms, also known as Calocybe indica, are delicious and commonly used in various cuisines. Here's a simple recipe to cook Milky mushrooms:
Ingredients:
- 1 pound (450 grams) Milky mushrooms
- 2 tablespoons oil (vegetable or olive oil)
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust according to your preference)
- Salt to taste
- Fresh cilantro leaves (coriander leaves), chopped for garnish (optional)
- Lemon wedges for serving (optional)
Instructions:
Clean the Milky mushrooms by removing any dirt or debris. Trim the stems and slice the mushrooms into thick pieces.
Heat oil in a pan or skillet over medium heat. Add the chopped onions and sauté until they become translucent.
Add the minced garlic and grated ginger to the pan. Sauté for another minute until the raw smell disappears.
Add the sliced Milky mushrooms to the pan and stir well to coat them with the onion mixture. Cook for about 5 minutes until the mushrooms start to release their moisture.
In a small bowl, mix together cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Add this spice mixture to the mushrooms and stir well to evenly coat them.
Reduce the heat to low and cover the pan. Let the mushrooms cook for about 10-15 minutes, stirring occasionally. This allows the flavors to blend and the mushrooms to become tender.
Once the mushrooms are cooked and tender, remove the lid and increase the heat to medium-high. Stir-fry for a few more minutes until any excess moisture evaporates, and the mushrooms are lightly browned.
Remove from heat and transfer the cooked Milky mushrooms to a serving dish. Garnish with chopped cilantro leaves if desired.
Serve hot as a side dish or as a main course with rice or bread. Squeezing some fresh lemon juice over the mushrooms before serving can add a refreshing touch.
Enjoy your Milky mushrooms! Feel free to experiment with additional spices or ingredients to suit your taste preferences.
