Seasoning a cast-iron griddle or skillet is a crucial step to create a natural non-stick surface and prevent rusting. Follow these steps to season your cast-iron griddle or skillet:

  1. Wash the new cast-iron: If your griddle/skillet is brand new, wash it with warm, soapy water to remove any protective coating applied during manufacturing. Use a sponge or scrubber to clean it thoroughly. If you have an old cast-iron that needs re-seasoning, you can skip this step if it's already clean.

  2. Dry it completely: After washing, use a towel to dry the cast-iron thoroughly. Ensure there is no water left on the surface.

  3. Preheat your oven: Preheat your oven to about 350-400°F (175-200°C).

  4. Apply a thin layer of oil: Choose an oil with a high smoke point, such as vegetable oil, flaxseed oil, or grapeseed oil. Avoid using butter or low-smoke-point oils like olive oil, as they can become sticky. Apply a thin layer of oil to the entire surface of the griddle/skillet, including the handles.

  5. Remove excess oil: Using a clean paper towel or cloth, wipe off any excess oil from the surface. The layer of oil should be very thin; otherwise, it can become sticky or leave a residue.

  7. Bake for an hour or more: Let the griddle/skillet bake in the oven for at least an hour, allowing the oil to polymerize and create a smooth, non-stick coating. If you're seasoning an old cast-iron or want a more durable seasoning, you can repeat this process two or three times.

  8. Cool and store: Turn off the oven and let the cast-iron cool down inside the oven. Once it's cooled, you can take it out and store it in a dry place.

  9. Maintain regularly: After each use, clean your cast-iron griddle/skillet with hot water and a brush or non-abrasive sponge. Avoid using soap, as it can strip away the seasoning. Dry it thoroughly with a towel, then place it on the stove over low heat to ensure it's completely dry. Once dry, apply a thin layer of oil to maintain the seasoning and protect the cast-iron from rust.
